CHRISTMAS MERINGUES
The Winter Holiday (or Christmas) Meringues have been a favorite of Janet Wagner, the owner of A Slice of Heritage, for over 30 years. She has made them for holiday gift baskets, parties, cookie exchanges, and family pleasure. The children always love to help. Friends say, “Ooooh! You made those wonderful little sweets!”
Ingredients
2 egg whites
food coloring
2/3 cup sugar
small package of bittersweet chocolate chips (or nuts, butterscotch, chocolate mint, white chocolate chips, etc.).
Step by Step
Preheat oven to 400º.
1) Beat 2 egg whites and drops of food coloring. (Add a lot, it fades). I use red and green to make pink and light green meringues for the Christmas holidays.
2) After it stiffens a bit, add 2/3 cup sugar. Continue beating.
3) When mixture reaches desired stiffness, fold in small package of bittersweet chocolate chips (or nuts, butterscotch, chocolate mint, white chocolate chips, etc.).
4) Drop by teaspoonful on ungreased cookie sheet.
5) Turn oven off. Place meringues in oven and leave in oven for at least 6 hours or overnight.

Makes 2 sheets full, around 4 dozen.

Can do 3 or 4 days in advance.6) Serve and Enjoy! Serve with ice cream as a dessert accompaniment, or as a festive candy.

HINT: I like to put them in holiday treat bags and tie with a festive ribbon. Great for friends, teachers, or hostess gifts
