Iced Pumpkin Bars
This recipe is courtesy of my friend Janet Wagner, a punchneedle designer. (Her company is A Slice of Heritage)Iced Pumpkin Bars are a fall favorite for Janet’s family, especially for Halloween and Thanksgiving.
Ingredients
Pumpkin Bar Ingredients
4 eggs
2 cups pumpkin
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup chopped walnuts or pecans
1 cup oil
2 cups sugar
2 cups flour
2 tsp cinnamon
½ tsp nutmeg

Cream Cheese Icing Ingredients
1 stick butter
1 package cream cheese (8 oz), softened
2 cups powdered sugar
1 tsp vanilla
Milk if necessary
Step by Step
Pumpkin Bar Instructions
Preheat Oven to 350 degrees F
1) In a mixing bowl, beat eggs, sugar, oil and pumpkin.
2) In a different mixing bowl, combine flour, baking powder, baking soda, salt, and spices
3) Gradually add the flour mixture to pumpkin mixture and mix well
4) Pour into a greased 9 x 13 inch baking pan.
5) Bake at 350 degrees F for 25-30 minutes.
6) Cool completely

Cream Cheese Icing Instructions
1) Beat cream cheese, sugar, butter and vanilla in a small mixing bowl
2) Add enough of the milk to achieve desired spreading consistency
3) Spread over bars.
4) Serve and Enjoy!
